Celebrate National Grilled Cheese Day on April 12. Many fine restaurants and delis will make a grilled cheese for you. But the best is when you make it yourself!
Here’s how we make it at my house.
Ingredients:
Brioche Bread
Sliced American Cheese
Shredded Sharp Cheddar Cheese
New Swiss Cheese (aged very little – no holes)
Butter – real butter (did I say real?)
Hot skillet or griddle
Directions:
Place 1/2 tablespoon butter (real) on hot skillet. Immediately place one slice brioche bread over butter. Place 1/4 cup shredded cheese on bread then put on the swiss cheese and then the American cheese. Top with another slice of brioche bread. Press sandwich with wide spatula. Let cook for about a minute, then pick up sandwich with spatula, place another 1/2 tablespoon of butter on skillet. Flip sandwich onto butter. Continue to cook until cheese is melted and gooey. Might need to flip one more time just to make sure the sandwich is toasted evenly on both sides.
